The Bake

Our breads are hand made in small batches and hearth baked using long fermentation times to achieve the flavor and aromatic qualities, as well as crust and crumb development. The majority of our bread is made with our sourdough starter and not commercial yeast. Along with the obvious flavor there are additional benefits to baking bread using our method both for the keeping qualities without additives and the health benefits from the long fermentation times. We only bake once a day due to the time involved in the long fermentation time, so when we are sold out, we are sold out for the day.

The varieties listed below are not all that we produce but the most common staples made daily. Flavors and types vary during seasons and holidays. *rotating varieties

Sourdough– Caramelized nutty crust, random airy crumb, great as is, awesome toastability.

  • Plain – 28oz Batard – Bread flour, water, high gluten flour, pure rye flour, kosher salt, corn meal
  • Parmesean – 28oz Boule – Bread flour, water, parmesean cheese, high gluten flour, pure rye flour, kosher salt, corn meal
  • Spinach Bacon Onion*- 28oz Boule – Bread flour, water, high gluten flour, bacon, Spanish onion, pure rye flour, baby spinach, kosher salt, corn meal
  • Olive Basil Black Pepper* – 28oz Boule –Bread flour, water, high gluten flour, kalamata olives, pure rye flour, fresh basil, kosher salt, black pepper, corn meal
  • Roasted Garlic* – 28oz Boule- Bread flour, water, high gluten flour, garlic cloves, pure rye flour, kosher salt, cornmeal
  • Grain and Seed Stone Ground Wheat – 28oz Boule – Bread flour, water, stone ground wheat flour, high gluten flour, cornmeal, cracked wheat, rye chops, millet, oats, flax seed, sesame seed, kosher salt, pure rye flour, egg whites
  • Cranberry Walnut Stone Ground Wheat – 28oz Boule – Bread flour, water, high gluten flour, stone ground wheat flour, dried cranberries, walnuts, kosher salt, corn meal, pure rye flour, egg whites
  • Chocolate Cherry Stone Ground Wheat Sourdough* Saturday – 28oz Boule – Bread flour, water, high gluten flour, stone ground wheat flour, semi sweet chocolate, dried cherries, kosher salt, pure rye flour, corn meal, egg whites
